Citrus mahi mahi

took a few different recipes and mixed them to fit what I can eat. It was okay- but DH thought the flavor was too mild.
Here’s the recipe… I hope it helps someone!
3-4 mahi mahi fillets (it was around 1.25 lbs)
1 medium sized orange, cut into small pieces without rind.
1 large lemon (juice only)
1 medium lime, cut into small pieces without rind.
1/2 can crushed pineapple (I used a no added sugar/no syrup version by Dole)
1/2 cup fresh salsa (we used a tomato and corn salsa. I put it on DH’s fish only. Increase amount and add to main mixture if desired.)
To make:
Cook fish for 3 minutes in pam covered saute pan (over medium heat)
While it’s cooking, combine your orange, lime, lemon juice and pineapple in mixing bowl. (and salsa if desired.)
At the end of the 3 minutes, flip fish and add fruit salsa mixture.
Let cook for 5-6 minutes or until fish is white and flaky. Do NOT overcook, as fish will become tough/chewy.
Plate and serve with salsa.
